This recipe came about one afternoon as I was searching for something for lunch. Usually I have leftovers but that day, I had nothing. So I had to invent something out of the meager ingredients I found. So really you can substitute any veggies you have on hand for this recipe. Even cats love it!
Ingredients:
1 cup garbanzo beans
1 cup chopped kale
2 cloves garlic, minced
prepared marinara sauce
penne pasta
red pepper flakes
parmesean cheese
olive oil
Directions:
1. Coat a skillet with olive oil and saute the garbanzo beans, kale and garlic.
2. While the veggies are softening, cook your pasta.
3. Add the pasta sauce to the veggies once the kale is softened. Add salt and red pepper to taste.
4. Mix in the cooked pasta with the sauce and veggies. Top with parmesean cheese and serve.
