BURGER AND FRIES

Okay, I may have lead you on a bit with the title of this post. This is my healthy, vegan version of a burger and fries. Wait, don't leave, you can easily adapt this recipe and use a real burger if you want. I've never been a huge burger fan, but with the arrival of new burger spots popping up all around Atlanta, I've been thinking more about them. So here is my take on a burger and fries with a creamy spread, avocado and mustard roasted potatoes.

Burger Ingredients:

whole wheat buns
your favorite frozen (or homemade veggie burgers)
avocado
1/2 cup sour cream, or vegan sour cream
1 clove minced garlic
2 tablespoons fresh parsley, chopped
juice of 1/2 a lemon
salt and pepper to taste

Potato Ingredients:

4 small yukon gold potatoes
1 tablespoon olive oil
1/2 cup prepared mustard
2 tablespoons powdered mustard
1 tablespoon cumin
cayenne pepper to taste
salt and pepper to taste

Directions:

1. Preheat your oven to 400 degrees. Cube your potatoes and place them in a shallow baking pan in a single layer. Mix the rest of the potato ingredients together in a bowl and then pour over the potatoes. Toss around until the potatoes are evenly coated. Roast for 45 minutes or until fork tender.

2. Mix the sour cream, garlic, lemon juice, salt, pepper & parsley together and set aside.

3. Prepare your veggies burgers according to the package and slice the avocado.

4. Assemble your burger by spreading some of the sour cream spread on the bun and topping your burger with avocado and a little sprinkle of salt. Serve with the mustard roasted potatoes.

  1. I'm in NYC with a wealth of incredible vegan restaurants and tons of vegan choices at the market. Meatless burgers are one of my favorite meals- especially if they're cheeseburger with Diaya cheddar!!! Thank you for sharing this great summer-time recipe and promoting cruelty-free diets!
