ROASTED BEETS

I'm pretty sure I hadn't ever had beets until a year or so ago. But they were offered up in a few veggie plates I ordered and each time I was pleasantly surprised to find out that I really like them. I still had no aspirations to cook them myself because I had no idea how. But then one night I was watching Oliver's Twist on Netflix, a seriously good cooking show, and he roasted beets. It was so easy, I made the decision to try it myself. And now I'm passing them on to you. They are so sweet and yummy and pretty darn good for you too.

Ingredients:

4 large beets
3 tablespoons balsamic vinegar
2 tablespoons olive oil
salt & pepper to taste

Directions:

1. Preheat your oven to 400 degrees. Take the stems off your beets, I just tore them off. Wash them, cut off the ends and peel them with a vegetable peeler. Cut them into bite size pieces. Make sure you deal with beets on a plastic surface. They can dye any wood surface red.

2. In a baking dish with a lid (you can also use tin foil), mix the beets with the rest of the ingredients.

3. Cover and bake the beets for 45 minutes to an hour until they are fork tender. Enjoy!

Notes: Beets are a great with goat cheese sprinkled on top.
