GLUTEN FREE, VEGAN BURGERS

I found this recipe via Pinterest which then lead me to the blog Hillary Makes. I had been searching for an easy veggie burger recipe for so long. Some can be so complicated but this one is a breeze. If your chickpeas and quinoa are already to go, these burgers will be done in no time. And they are tasty too. They stay together well although they do squeeze out of the bun a little as you eat them.


 Ingredients:


1 cup quinoa
1/2 cup chickpeas, drained and mashed
1 tbsp tomato paste
1 tsp dried basil
1/2 tsp cumin
1 tsp dried corriander
1/2 tsp paprika
1/2 tsp garlic powder
salt and pepper to taste
1 tsp olive oil


Directions:


1. Boil 2 cups of water in a medium-sized pot.  Add quinoa and reduce to a simmer.  Let cook until quinoa has absorbed all the water, about 20 minutes.
2. While the quinoa is cooking, mash the chickpeas with a fork or potato masher.
3. In a skillet, dry roast the spices, until fragrant, about 3 minutes.
4. Toss all the quinoa minus a 1/4 cup, chick peas, tomato paste and spices into a food processor. Put the mixture in a bowl and stir in salt and pepper.  Stir in the 1/4 cup of remaining quinoa.  Refrigerate for 30 minutes.
5. In a medium skillet, heat the oil over medium-high heat.  Fry the quinoa burger patties until each side is browned.
6. Serve on bun or pita with greens and condiments. I used a mixture of vegan mayo, yellow mustard, ketchup and a touch of siracha for spice.
