1. Enchiladas with tomatillo sauce and poblano cashew crema by Love & Lemons. Not only did this recipe rock my world, I have pinned a
bunch more recipes from this blog that I want to try. The filling was hearty and rich while the sauce was bright and spicy. The poblano cream sauce was so good that we slathered the leftover on some sauteed green veggies the next night. The only little change we made here was to
add in some veggie sausage to the enchilada filling because we had some
laying around. It worked wonderfully. Her photography
makes me want to either never take a picture again or work really hard
to get mine as good as hers.Not only that, the blog is exceptionally designed to boot.
2. Sweet Potato Cakes with sour cream and chipotle black bean salsa by Lisa is Cooking. I have not really explored this blog yet but if my first experience is any indication of the future, then I will be. These little guys are so delicious and fancy looking that I'm going to entertain with them in the near future. The sweet potato was fluffy and sweet and the salsa was the perfect compliment along with the creamy sour cream. The only minor change we made on this one was to omit the red onion in the salsa because we didn't have any. Oh, and we used vegan sour cream.
