THANKSGIVING MENU

okay, so I don't talk a lot about food here, but I LOVE to cook. I love creating recipes and trying them out and perfecting them. My husband and I consider it a good day when we get to spend an hour in the kitchen cooking together and then enjoying the fruits of our labor. So I would like to share with you a few recipes that I think would make a wonderful (nontraditional) Thanksgiving meal.

I would start with Roasted Butternut Squash Soup. (image via Vegan Yum Yum) This is a recipe I came up with myself after a few trials and it packs so much flavor and warmth into each spoonful. The best part about it is that you can make it as savory or as sweet as you like. It can also be made ahead and taken with you out of town.

Then, I would serve Spanakopita. Now this is a meal that may seem a little daunting since it has filo dough, but I promise, it's nearly impossible to mess up. It does take a lot of prep, but it keeps and travels well so you can make it ahead of time and pop it in the oven the next day to crisp it back up and it's still wonderful.

Lastly, what would Thanksgiving be without a pumpkin dessert? You traditionalists may not be able to live without your pumpkin pie, but once you try this pumpkin cupcake with maple cream cheese icing, you may change your mind. If you've made the soup & spanakopita, then you deserve to indulge on these decadent cupcakes.
