EASY SPINACH LASAGNA

As we continue to trudge through winter, even here in the south, I like to make good ole' comfort food. This lasagna is so easy, it can barely be called a true lasagna. I used to slave for hours making a good lasagna until I accidentally made this one when I was in a rush and realized you can make a good lasagna in no time.


Ingredients:

1 box lasagna noodles
1 and 1/2 box of Pomi marinara sauce
1 container of ricotta cheese
4 cups of fresh spinach
1 wedge of parmesan cheese
1 cup of italian mix shredded cheese
1 egg
1 tbsp dried oregano
1 tbsp dried basil

Directions:

1. Bring a large pot of salted water to a boil. Add the lasagna noodles.

2. Wash, de-stem and chop the spinach. Grate the parmesan cheese. In a large bowl, mix the spinach, egg, ricotta & parmesan cheeses. Add salt, pepper, oregano & basil.

3. Preheat the oven to 350 degrees. Strain the lasagna noodles. Spread some of the marinara sauce in the bottom of a 9 by 13 pan. Place lasagna noodles to cover the bottom. Spread ricotta and spinach mixture over the noodles. Pour marinara sauce over ricotta & spinach. Repeat until all ingredients are used. End with noodles, then marinara sauce. Top with shredded cheese and a sprinkle of basil & oregano.

4. Cover with aluminum foil. Bake for 45 minutes. Then, take off the foil and bake until the cheese gets brown & bubbly.

Notes:

Bagged spinach would make this recipe even quicker.

It can be difficult to get the Pomi marinara sauce, so you can use any other marinara sauce you get in the jar. I happen to think that the marinara sauce you use makes this simple dish, so get a good one.

I have never gotten the "no-boil" noodles to work, but please use them if they work for you. Or better yet, make your own pasta noodles!
