I honestly thought I made up this recipe the other night but as I began to do research for this post, I realized that this is quite the common substitute among vegetarians and vegans. I also whipped up a quick salsa to go on top that lovely. So here it goes, awesome lentil tacos.
Ingredients:
1 cup uncooked lentils
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon cayenne powder
1/4 teaspoon dried oregano
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper
corn tortillas
1/2 white onion, diced
1 avocado, diced
2 small tomatoes, diced
juice from half of a lime
salt & pepper to taste
Directions:
1. Boil the lentils until tender, drain and set aside.
2. Prepare the salsa by combining the onion, tomatoes, avocado, lime juice, salt and pepper in a bowl and mix.
3. Add the spices to the lentils and heat through on the stove. Add a little water if you need to.
4. Heat the tortillas in a skillet with a little oil or pop them in the microwave for a few seconds.
5. Fill each tortilla with the lentil mixture and top with the salsa. Enjoy!
