There is a great little burger place that opened in my neighborhood about a year ago. They have great quinoa burgers and a wonderful array of toppings and pre-designed combinations. I am the type of person that usually orders the same thing until I get tired of it and then I will move on to something else. So when I got around to trying their burger with the kale slaw on it, I was amazed. So last week, since it was the 4th of July and all, we made BBQ tofu sandwiches with kale slaw. Here is the recipe.
Ingredients:
3 cups kale, chopped small
1 cup carrot, shredded
2/3 cup mayo, I used veganaise
2 tablespoons vinegar, I only had apple cider vinegar so that's what I used
2 tablespoons sugar, less if you don't like sweet slaw
1 teaspoon dried mustard
salt and pepper to taste
Directions:
1. Whisk the mayo, vinegar, sugar, mustard and salt and pepper together.
2. Toss in the carrots and kale
3. Refrigerate until ready to serve.
