CRUNCHY TOMATILLO-AVOCADO SALSA

There is one very good reason you had to wait all weekend for this recipe. We hadn't made it yet. On Friday, we threw a dinner party for about 15 people. The reason was two-fold. My husband wanted to try out some of the yummy recipes by Rick Bayless of Mexico One Plate at a Time and I needed to show off my new designs and get feedback. So we whipped up this really yummy salsa along with two taco fillings: Creamy chicken and greens with roasted poblano & Potatoes and green chilies. They were both a hit but the salsa was the real star (along with my designs). It's great to make if you're only going to make salsa because it's a little like guacamole too. So you get more bang for your buck. It's that time of year when sipping margaritas on the porch with chips and salsa is the perfect weekend activity and this is the perfect salsa to do it with.

Ingredients:

4 medium tomatillos, husked and rinsed

1/2 cup (loosely packed) coarsely chopped cilantro

hot green chiles to taste (roughly 2 small serranos or 1 small jalapeƱo), roughly chopped

1 ripe avocado, pitted, flesh scooped from the skin

1 small white onion, cut into 1/4-inch pieces

1/4 cup water
Salt

Directions:

1. Roughly chop half of the tomatillos and scoop them into a food processor with the cilantro and green chiles. Measure in 1/4 cup water and process to a slushy, coarse puree.

2. Roughly chop half the avocado, add it to the processor and pulse until it is incorporated into the salsa. Scrape into a serving dish.

3. Scoop the onion into a small strainer and rinse under cold water. Add to the salsa. Finely chop the remaining tomatillos and add them, too.

4. Finally, chop the remaining avocado into 1/4-inch pieces and stir them into the salsa. Taste and season with salt, usually about 3/4 teaspoon. 



5. Serve with chips
