CREAMY PEANUT PASTA

I know, I said I was gone for the weekend but I had to share this pasta dish we made last night. You have probably noticed that I don't take my own pictures so this picture does not accurately describe the way it will look unless you use the veggies seen here. I am always so ready to eat by the time I sit down that I don't want to take pictures. Anyways, this is a simple and decadent recipe that you can make any night of the week with any veggies you have on hand.


Ingredients:

1 onion, diced
3 carrots, diced
1 large bunch of kale, chopped
3 cloves garlic, minced
olive oil
fresh pasta
1/2 cup peanut butter (smooth)
3-4 tablespoons soy sauce
siracha (rooster) sauce to your liking
cilantro & chopped nuts, for topping
salt to taste

Directions:

1. Start heating the water to boil the pasta. Chop the veggies.

2. Saute the onion and carrot in a large saucepan until soft. Drop your pasta. Add the kale and garlic.

3. Whisk the peanut butter, soy sauce and siracha sauce in a bowl. Once the pasta is done cooking, add some of the starchy pasta water to the sauce until it reaches a nice consistency. Taste the sauce, adjust by adding one of the ingredients if it's not to your liking.

4. Add sauce and pasta to the veggie pan and incorporate until warm.

5. Top with cilantro, chopped nuts, and a sprinkle of salt.
